How to make an Easter egg surprise

Scoffed Cooking School shows us how to make a cracking chocolate Easter treat.

Chocolate eggs come in all shapes and sizes, but our friends from Scoffed Cooking School have helped us concoct an extra-special treat even the Easter bunny couldn’t dream up. Watch our video, then get creative at home.

Scoffed’s Easter egg surprise

Recipe makes roughly 12 eggs
Prep and cooking time: 15 minutes
Setting time: 10 minutes in the fridge

Equipment

  • Egg mould (12x7cm)
  • Pastry brush
  • 2 metal bowls
  • Medium-sized saucepan
  • Baking tray

Ingredients

  • 500g compound dark chocolate
  • 50g assorted coloured lollies or mini chocolates
  • Can of edible gold spray or a packet of edible gold dust (optional)

Method

  1. Polish your moulds to make sure they’re clean and mark-free. This is important to ensure your chocolate egg is nice and smooth.
  2. Place your chocolate in a metal bowl and melt directly on an induction stove top. Alternatively, create a bain-marie (see our video for directions) with a pan of steaming water and melt the chocolate over the pan.
  3. Chocolate and water don’t mix, so make sure you don’t get any water in the chocolate when it’s melting. If you do, it will seize.
  4. Fill each egg mould with melted chocolate, making sure moulds are covered to the edges. Try not to pour the chocolate too thinly or it will crack when removing from the moulds. Be sure to scrape away any excess chocolate from the sides of your moulds.
  5. Pour any excess chocolate back into the bowl and place your moulds to one side to set. If you want to speed up the process, you can put them in the fridge.
  6. When the chocolate is set nice and hard, carefully push the eggs out of the moulds.
  7. Fill one side of each egg with lollies then, using some melted chocolate as your glue, brush the edges to stick the other halves on top. Alternatively, warm up a baking tray, take one side of each egg and melt the edges on the tray. Stick them to the other egg halves, which you will have filled with lollies.
  8. Leave to set.
  9. Spray your finished eggs with edible gold spray or dust.
  10. Crack open and enjoy. If you want to keep for later, store in a cool, dry place.
